Instructions
Step 1: Prepare the Kadhi Mixture
- In a large mixing bowl, whisk the yogurt until smooth.
- Add gram flour (besan), turmeric powder, and water to the yogurt. Whisk until there are no lumps.
- Stir in the ginger paste, slit green chilies, sugar, and salt. Mix well.
Step 2: Cook the Kadhi
- Transfer the yogurt mixture to a deep pan or kadhai.
- Cook on medium heat, stirring continuously to prevent curdling. Bring the mixture to a boil, then lower the heat and let it simmer for 10-12 minutes. Stir occasionally.
Step 3: Prepare the Tempering (Tadka)
- Heat ghee or oil in a small pan over medium heat.
- Add mustard seeds and let them splutter.
- Add cumin seeds, dried red chilies, curry leaves, and asafoetida. If using, add fenugreek seeds, cloves, and cinnamon stick.
- Stir the tempering for 30 seconds or until aromatic.
Step 4: Combine and Garnish
- Pour the prepared tempering over the simmering kadhi and mix gently.
- Let the kadhi simmer for another 2-3 minutes to absorb the flavors of the tempering.
- Garnish with freshly chopped coriander leaves.
Step 5: Serve
- Serve the Gujarati Kadhi hot with steamed rice, jeera rice, or khichdi. It can also be enjoyed with phulkas or parathas.
