Ingredients
For the Kadai Masala (Spice Mix):
- 1 tablespoon coriander seeds

- 1/2 teaspoon kasuri methi (dried fenugreek leaves), crushed
- Salt, to taste
- 2 tablespoons fresh cream (optional)
- 2 tablespoons fresh coriander leaves, chopped (for garnish)
Instructions
Step 1: Prepare the Kadai Masala
- Heat a small pan and dry roast coriander seeds, cumin seeds, dried red chilies, fennel seeds (if using), and black peppercorns until aromatic.
- Allow the spices to cool, then grind them into a coarse powder using a mortar and pestle or spice grinder. Set aside.
Step 2: Sauté the Paneer and Vegetables
- Heat 1 tablespoon of oil in a pan. Lightly fry the paneer cubes until golden on the edges. Remove and set aside.
- In the same pan, lightly sauté the diced bell pepper for 2-3 minutes. Remove and set aside.
Step 3: Prepare the Gravy
- Heat the remaining oil in the pan. Add chopped onions and sauté until golden brown.
- Add ginger-garlic paste and cook for 1 minute.
- Stir in the turmeric powder, red chili powder, and the freshly ground kadai masala. Cook for 30 seconds.
- Add the tomato puree and cook until the oil separates from the masala.
Step 4: Assemble the Kadai Paneer
- Add the fried paneer cubes and sautéed bell peppers to the gravy.
- Sprinkle garam masala and crushed kasuri methi. Mix well.
- Add a splash of water if the gravy is too thick and simmer for 3-4 minutes.
- Stir in fresh cream for a richer flavor (optional).
Step 5: Garnish and Serve
- Garnish with chopped coriander leaves.
- Serve hot with naan, roti, or jeera rice.
