Aam ka Chunda is a traditional Gujarati sweet and tangy mango pickle made from grated raw mangoes, sugar, and spices. It’s a delightful accompaniment to Indian meals, especially with theplas, parathas, or puris.​



Ingredients:

  • 2 cups grated raw mango (preferably sour varieties like Rajapuri or Ladva)
  • 2 cups sugar
  • 1 teaspoon salt
  • 1 teaspoon red chili powder (adjust to taste)
  • 1 teaspoon roasted cumin powder
  • 1/4 teaspoon asafoetida (hing)​

Instructions:

  1. Prepare the Mangoes:
    • Wash and peel the raw mangoes.
    • Grate them finely and measure 2 cups.​
  2. Combine with Sugar:
    • In a mixing bowl, combine the grated mango and sugar.
    • Mix well, cover, and let it rest for 8-10 hours or overnight.
    • The sugar will dissolve, and the mixture will become syrupy.​
  3. Cook the Mixture:
    • Transfer the mango-sugar mixture to a heavy-bottomed pan.
    • Cook on low heat, stirring continuously, until it reaches a one-string consistency.
    • This may take about 15-20 minutes.​
  4. Add Spices:
    • Once the desired consistency is achieved, turn off the heat.
    • Add salt, red chili powder, roasted cumin powder, and asafoetida.
    • Mix thoroughly.​
  5. Cool and Store:
    • Allow the chunda to cool completely.
    • Transfer to a clean, dry glass jar.
    • Store in a cool, dry place. It stays good for several months.​
