Instructions
Step 1: Boil the Milk
- Pour the milk into a heavy-bottomed pan and bring it to a boil over medium heat.

Step 2: Reduce the Milk
- Continue simmering the milk until it reduces to half its original volume. This may take 30-40 minutes.
- Stir often, scraping the sides of the pan to incorporate the thickened cream back into the milk.

- Add sugar and mix well until dissolved.
- Stir in cardamom powder, saffron strands (if using), and half of the chopped nuts.
- Cook for another 5 minutes to let the flavors blend.
Step 4: Cool and Serve
- Remove from heat and let the Basundi cool to room temperature.
- Add rose water (if using) for an aromatic touch.
- Transfer to serving bowls, garnish with the remaining nuts, and chill in the refrigerator for at least an hour before serving.
