Ingredients
- 1/2 cup coriander seeds
- 2 tablespoons cumin seeds
- 2 tablespoons chana dal (split chickpeas)
- 1 tablespoon urad dal (black gram dal)
- 1 tablespoon fenugreek seeds
- 10-12 dried red chilies
- 1 teaspoon black peppercorns
- 1 teaspoon mustard seeds
- 1 teaspoon turmeric powder
- 1/2 teaspoon asafoetida (hing)
- 10-12 curry leaves
- 1 tablespoon dried coconut (optional)
Instructions
Step 1: Dry Roast the Ingredients
- Heat a pan on low-medium heat.
- Dry roast coriander seeds, cumin seeds, chana dal, urad dal, and fenugreek seeds until aromatic.
- Add dried red chilies, black peppercorns, mustard seeds, and curry leaves. Roast for another 2 minutes.
- Finally, mix in turmeric powder, asafoetida (hing), and dried coconut. Roast for 30 seconds and turn off the heat.
Step 2: Cool and Grind
- Let the roasted spices cool completely.
- Transfer to a blender or spice grinder and grind into a fine powder.
Step 3: Store
- Store the sambar masala in an airtight container.
- Keep it in a cool, dry place for up to 3 months.
