Ingredients

- 1 large onion, finely chopped
- 2 tomatoes, pureed
- 1 green chili, chopped
- 1 teaspoon ginger-garlic paste

- 1/2 teaspoon turmeric powder
- 1 teaspoon red chili powder
- 1 teaspoon coriander powder
- 1/2 teaspoon garam masala
- 1 teaspoon cumin seeds
- 1 bay leaf
- 1/2 teaspoon kasuri methi (dried fenugreek leaves)
- Salt to taste
- 2 tablespoons oil or ghee
- 1/2 cup water (adjust as needed)
- 2 tablespoons fresh cream (optional, for richness)
- 1 tablespoon chopped coriander leaves (for garnish)
Instructions
Step 1: Prepare the Masala
- Heat oil or ghee in a pan over medium heat.
- Add cumin seeds and bay leaf, let them splutter.
- Add chopped onions and sauté until golden brown.
- Stir in ginger-garlic paste and green chili, sauté for a minute.
- Add tomato puree and cook until the oil separates.
- Mix in turmeric powder, red chili powder, coriander powder, and salt. Stir well.
- Add cashew paste and cook for another 2-3 minutes.
Step 2: Cook the Mushrooms
- Add sliced mushrooms to the pan and stir well.
- Pour in water and let it simmer for 7-10 minutes until mushrooms are tender.
- Stir in garam masala and kasuri methi.
- If using, add fresh cream for extra richness and mix well.
Step 3: Serve
- Garnish with fresh coriander leaves.
- Serve hot with naan, roti, or rice.
