Ingredients
For the Curry:
- 1 kg mutton (bone-in pieces)
- 3 tablespoons mustard oil (or ghee)
- 2 large onions, finely sliced
- 4-5 garlic cloves, minced
- 2 tablespoons ginger paste
- 1/2 cup plain yogurt, whisked
- 2 cups water
Spices:
- 2-3 green cardamom pods
- 1 black cardamom pod
- 4-5 cloves
- 1 cinnamon stick
- 2-3 bay leaves
- 1 teaspoon cumin seeds
- 2 teaspoons Kashmiri red chili powder (for color)
- 1 teaspoon regular red chili powder (adjust to taste)
- 1 teaspoon turmeric powder
- 2 teaspoons fennel powder
- 1 teaspoon dry ginger powder
- 1 teaspoon garam masala
- Salt to taste
For Garnish:
- Fresh coriander leaves, chopped
- Saffron strands soaked in 2 tablespoons warm milk (optional)
Instructions
Step 1: Prepare the Mutton
- Wash the mutton pieces thoroughly and pat them dry.
- Heat mustard oil in a heavy-bottomed pan or pressure cooker until it reaches smoking point. Let it cool slightly, then reheat on medium heat.
- Add the mutton pieces and sear until golden brown. Remove and set aside.
Step 2: Sauté the Aromatics
- In the same oil, add cumin seeds, cardamom pods, cloves, cinnamon stick, and bay leaves. Fry for 30 seconds until aromatic.
- Add sliced onions and cook until golden brown, stirring occasionally.
- Stir in minced garlic and ginger paste, and sauté for 2-3 minutes.
Step 3: Build the Gravy
- Lower the heat and add Kashmiri red chili powder, regular red chili powder, turmeric powder, fennel powder, and dry ginger powder. Stir well for a few seconds.
- Add whisked yogurt gradually, stirring continuously to prevent curdling.
- Return the seared mutton to the pan and mix well.
Step 4: Simmer the Curry
- Add 2 cups of water, cover, and simmer on low heat for 1.5 to 2 hours, or until the mutton is tender and the gravy thickens. Stir occasionally.
- If using a pressure cooker, cook for 5-6 whistles, then let the pressure release naturally.
- Add garam masala and adjust salt to taste. Simmer for another 5 minutes.
Step 5: Garnish and Serve
- Garnish with chopped coriander leaves and saffron milk (if using).
- Serve hot with steamed rice, naan, or paratha.
