Ingredients
For the Panjiri:
- 1 cup whole wheat flour
- 1/2 cup ghee (clarified butter)
- 1/2 cup powdered sugar or jaggery
- 1/4 cup almonds, chopped
- 1/4 cup cashews, chopped
- 2 tablespoons melon seeds
- 2 tablespoons desiccated coconut
- 2 tablespoons edible gum (gond), optional
- 1 teaspoon cardamom powder
- 1/4 cup raisins
Instructions
Step 1: Roast the Edible Gum (Optional)
- Heat 2 tablespoons of ghee in a pan.
- Add edible gum and roast until it puffs up. Remove and crush into smaller pieces. Set aside.
Step 2: Roast the Nuts and Seeds
- In the same pan, add almonds, cashews, and melon seeds.
- Roast them on low heat until golden and aromatic. Remove and set aside.
Step 3: Roast the Flour
- Add the remaining ghee to the pan and melt it.
- Add whole wheat flour and roast on low-medium heat. Stir continuously to ensure even roasting.
- Roast for 10-12 minutes or until the flour turns golden brown and emits a nutty aroma.
Step 4: Combine Ingredients
- Lower the heat and add the roasted nuts, seeds, desiccated coconut, and crushed edible gum to the flour. Mix well.
- Turn off the heat and let the mixture cool slightly.
- Add powdered sugar or jaggery and cardamom powder. Mix thoroughly to combine.
Step 5: Add Raisins
- Add raisins to the mixture and mix well.
- Store the Panjiri in an airtight container once it has completely cooled.
