Veg Schezwan Noodles is a spicy and flavorful Indo-Chinese dish loaded with vegetables and tossed in a fiery Schezwan sauce. It’s perfect as a standalone meal or a side dish.

Ingredients

For the Noodles:

  • 200g noodles (Hakka or any thin variety)
  • 1 tablespoon oil
  • Water for boiling
  • Salt, to taste

For the Stir-Fry:

  • 2 tablespoons oil
  • 3-4 garlic cloves, minced
  • 1 small onion, sliced
  • 1 small carrot, julienned
  • 1/2 cup cabbage, shredded
  • 1 small bell pepper (capsicum), julienned
  • 1/4 cup green beans, chopped
  • 2-3 tablespoons Schezwan sauce (adjust to taste)
  • 2 tablespoons soy sauce
  • 1 teaspoon vinegar
  • 1/2 teaspoon black pepper powder
  • Salt, to taste
  • 2 spring onions, chopped (for garnish)

Instructions

Step 1: Cook the Noodles

  1. Bring a large pot of water to a boil. Add a pinch of salt and a teaspoon of oil to prevent sticking.
  2. Add the noodles and cook according to the package instructions until al dente.
  3. Drain the noodles, rinse under cold water, and toss with a little oil to keep them separate. Set aside.

Step 2: Prepare the Stir-Fry

  1. Heat oil in a large wok or skillet over high heat.
  2. Add minced garlic and stir-fry for a few seconds until aromatic.
  3. Add sliced onions and stir-fry for 1 minute.
  4. Add carrots, cabbage, bell pepper, and green beans. Stir-fry on high heat for 2-3 minutes until the vegetables are slightly tender but still crunchy.

Step 3: Add Sauces and Noodles

  1. Lower the heat slightly and add Schezwan sauce, soy sauce, vinegar, black pepper, and salt. Mix well.
  2. Toss in the cooked noodles and mix everything thoroughly, ensuring the noodles are well coated with the sauces and vegetables.
  3. Stir-fry for another 2-3 minutes on high heat.

Step 4: Garnish and Serve

  1. Turn off the heat and garnish with chopped spring onions.
  2. Serve hot as a standalone dish or pair with a side of Manchurian or hot and sour soup.
