Mushroom Masala is a rich and flavorful Indian curry made with mushrooms cooked in a spiced tomato-onion gravy. Perfect to pair with roti, naan, or rice.

Ingredients

For the Masala Base:

  • 200g mushrooms, sliced
  • 1 large onion, finely chopped
  • 2 tomatoes, pureed
  • 1 green chili, chopped
  • 1 teaspoon ginger-garlic paste
  • 1/4 cup cashews (soaked for 10 minutes and blended into a paste)
  • 1/2 teaspoon turmeric powder
  • 1 teaspoon red chili powder
  • 1 teaspoon coriander powder
  • 1/2 teaspoon garam masala
  • 1 teaspoon cumin seeds
  • 1 bay leaf
  • 1/2 teaspoon kasuri methi (dried fenugreek leaves)
  • Salt to taste
  • 2 tablespoons oil or ghee
  • 1/2 cup water (adjust as needed)
  • 2 tablespoons fresh cream (optional, for richness)
  • 1 tablespoon chopped coriander leaves (for garnish)

Instructions

Step 1: Prepare the Masala

  1. Heat oil or ghee in a pan over medium heat.
  2. Add cumin seeds and bay leaf, let them splutter.
  3. Add chopped onions and sauté until golden brown.
  4. Stir in ginger-garlic paste and green chili, sauté for a minute.
  5. Add tomato puree and cook until the oil separates.
  6. Mix in turmeric powder, red chili powder, coriander powder, and salt. Stir well.
  7. Add cashew paste and cook for another 2-3 minutes.

Step 2: Cook the Mushrooms

  1. Add sliced mushrooms to the pan and stir well.
  2. Pour in water and let it simmer for 7-10 minutes until mushrooms are tender.
  3. Stir in garam masala and kasuri methi.
  4. If using, add fresh cream for extra richness and mix well.

Step 3: Serve

  1. Garnish with fresh coriander leaves.
  2. Serve hot with naan, roti, or rice.

Tips for Perfect Mushroom Masala

  1. For Extra Creaminess: Add a tablespoon of yogurt or more cashew paste.
  2. For a Smoky Flavor: Use a small piece of charcoal to give a dhungar (smoke) effect.
