Instructions:

Step 1: Prepare the Dough

  1. In a mixing bowl, combine flour, salt, and sugar.
  2. Gradually add water and mix until a dough forms.
  3. Knead for about 5 minutes, cover with plastic wrap, and let it rest for 30 minutes.

Step 2: Roll and Layer the Dough

  1. Roll the dough into a thin rectangle.
  2. Spread softened butter over the dough, then fold it like a letter.
  3. Repeat rolling and folding 3-4 times to create flaky layers.
  4. Cover and refrigerate for at least 1 hour.

Step 3: Shape and Bake

  1. Preheat oven to 375°F (190°C).
  2. Roll out the chilled dough and cut into strips.
  3. Wrap each strip around a cone-shaped mold, sealing the edges.
  4. Bake for 25-30 minutes until golden brown and crispy.
  5. Let them cool completely before filling.

Step 4: Prepare the Filling

  1. In a bowl, mix ricotta cheese, powdered sugar, vanilla extract, and cinnamon.
  2. Fold in the whipped cream until smooth and fluffy.

Step 5: Fill and Serve

  1. Pipe the filling into the cooled pastry shells using a piping bag.
  2. Dust with powdered sugar and serve immediately.
