  • 1 yellow capsicum, diced
  • 1 cup pineapple chunks (fresh or canned – both work!)
  • ½ cup pineapple juice
  • 2 tbsp soy sauce

  • In a bowl, mix pineapple juice, soy sauce, ketchup, brown sugar, and ginger.
  • Pour this sauce into the pan and let it bubble for a minute.

4. Thicken the Sauce

  • Add the cornflour-water mix to the pan.
  • Stir well and cook for another 2 minutes – the sauce will start to thicken.

5. Mix Everything & Finish

  • Add the cooked chicken back to the pan.
  • Mix well so everything is coated in that yummy sauce.
  • Let it cook for 2–3 more minutes.
  • Garnish with spring onions and sesame seeds if you want to be a little fancy.

How to Serve

  • Serve hot with steamed white rice or even coconut rice if you’re feeling tropical.
