Aloo Paratha Recipe

Aloo Paratha is a classic North Indian stuffed flatbread filled with spiced mashed potatoes. It is crispy on the outside, soft inside, and best served with butter, yogurt, or pickle.


Ingredients

For the Dough:

  • 2 cups whole wheat flour
  • 1/2 teaspoon salt
  • Water (as needed for kneading)
  • 1 teaspoon oil or ghee

For the Filling:

  • 2 large potatoes, boiled and mashed
  • 1/2 teaspoon salt (or to taste)
  • 1/2 teaspoon red chili powder
  • 1/2 teaspoon turmeric powder
  • 1/2 teaspoon cumin powder
  • 1/2 teaspoon garam masala
  • 1/2 teaspoon amchur (dry mango powder)
  • 1 teaspoon ginger, grated
  • 2 green chilies, finely chopped
  • 2 tablespoons chopped coriander leaves

For Cooking:

  • Ghee or butter for frying

Instructions

Step 1: Prepare the Dough

  1. In a mixing bowl, combine whole wheat flour and salt.
  2. Gradually add water and knead into a soft, smooth dough.
  3. Add oil or ghee and knead again.
  4. Cover and let it rest for 20 minutes.

Step 2: Prepare the Filling

  1. In a bowl, mix mashed potatoes with all the spices, green chilies, ginger, and coriander leaves.
  2. Stir well to combine and set aside.

Step 3: Assemble the Paratha

  1. Divide the dough into equal portions and roll them into small balls.
  2. Roll out one dough ball into a small circle.
  3. Place a spoonful of the potato filling in the center.
  4. Gather the edges and seal the filling inside.
  5. Roll it out gently into a paratha, ensuring the filling doesn’t spill out.

Step 4: Cook the Paratha

  1. Heat a tawa or griddle on medium heat.
  2. Place the rolled-out paratha on the hot tawa.
  3. Cook for a minute, then flip and apply ghee.
  4. Flip again, applying ghee on the other side, and cook until golden brown.
  5. Repeat for all parathas.

Step 5: Serve

  1. Serve hot with butter, yogurt, or pickle.
  2. Enjoy your delicious Aloo Paratha!

Tips for Perfect Aloo Paratha

  1. For Softer Parathas: Use warm water while kneading the dough.
  2. For Extra Flavor: Add finely chopped onions to the potato filling.
  3. For Spicy Parathas: Increase the number of green chilies.
