Step 1: Prepare the Dough
- In a mixing bowl, combine whole wheat flour and salt.
- Gradually add water and knead into a soft, smooth dough.
- Add oil or ghee and knead again.
- Cover and let it rest for 20 minutes.
Step 2: Prepare the Filling
- In a bowl, mix mashed potatoes with all the spices, green chilies, ginger, and coriander leaves.
- Stir well to combine and set aside.
Step 3: Assemble the Paratha
- Divide the dough into equal portions and roll them into small balls.
- Roll out one dough ball into a small circle.
- Place a spoonful of the potato filling in the center.
- Gather the edges and seal the filling inside.
- Roll it out gently into a paratha, ensuring the filling doesn’t spill out.
Step 4: Cook the Paratha
- Heat a tawa or griddle on medium heat.
- Place the rolled-out paratha on the hot tawa.
- Cook for a minute, then flip and apply ghee.
- Flip again, applying ghee on the other side, and cook until golden brown.
- Repeat for all parathas.
Step 5: Serve
- Serve hot with butter, yogurt, or pickle.
