Amla Pickle Recipe | Indian Gooseberry Pickle | Amla ka Achar

Amla (Indian gooseberry) pickle is a tangy, spicy, and healthy condiment packed with the goodness of vitamin C. This homemade Amla Pickle (Amla ka Achar) is easy to make and pairs well with rice, parathas, and dal.


Ingredients

  • 500g amla (Indian gooseberry), washed and dried
  • 3 tablespoons mustard oil
  • 1 teaspoon mustard seeds
  • 1 teaspoon fennel seeds (saunf)
  • ½ teaspoon asafoetida (hing)
  • 1 teaspoon turmeric powder
  • 2 teaspoons red chili powder
  • 1 teaspoon salt (or to taste)
  • 1 teaspoon roasted cumin powder
  • 1 teaspoon fenugreek seeds (methi), crushed
  • 1 teaspoon nigella seeds (kalonji)
  • 2 tablespoons lemon juice
  • 1 tablespoon jaggery (optional, for a slight sweetness)

Instructions

Step 1: Prepare the Amla

  1. Steam or boil the amla for 5-7 minutes until slightly soft.
  2. Let them cool and separate the segments by gently pressing them.

Step 2: Temper the Spices

  1. Heat mustard oil in a pan until it reaches smoking point, then cool slightly.
  2. Add mustard seeds, fennel seeds, and asafoetida. Let them splutter.

Step 3: Cook the Pickle

  1. Add the amla segments and stir well.
  2. Mix in turmeric powder, red chili powder, salt, roasted cumin powder, fenugreek seeds, and nigella seeds.
  3. Cook on low heat for 3-4 minutes, stirring occasionally.
  4. Turn off the heat and mix in lemon juice and jaggery (if using).

Step 4: Store the Pickle

  1. Let the pickle cool completely.
  2. Transfer to a clean, dry, airtight glass jar.
  3. Let it rest for 2-3 days, shaking the jar occasionally to enhance flavors.
