Black Chana Masala Recipe

Black Chana Masala (Kala Chana Masala) is a popular North Indian dish made with chickpeas cooked in a rich and spicy tomato-based gravy. It pairs perfectly with rice, roti, or naan.



Ingredients

For Cooking Chickpeas:

  • 1 cup dried chickpeas (Kala Chana)
  • 3 cups water
  • 1/2 teaspoon salt
  • 1/2 teaspoon turmeric powder

For the Masala:

  • 2 tablespoons oil
  • 1 teaspoon cumin seeds
  • 1 onion, finely chopped
  • 2 tomatoes, pureed
  • 1 teaspoon ginger-garlic paste
  • 1/2 teaspoon turmeric powder
  • 1 teaspoon coriander powder
  • 1 teaspoon cumin powder
  • 1 teaspoon red chili powder
  • 1 teaspoon garam masala
  • 1 teaspoon chana masala powder (optional)
  • 1/2 teaspoon salt (or to taste)
  • 1/2 cup water
  • 1 tablespoon lemon juice
  • Fresh coriander leaves, chopped (for garnish)

Instructions

Step 1: Cook the Chickpeas

  1. If using dried chickpeas or Black Chana (kala chana), soak them in water overnight.
  2. Drain and rinse, then pressure cook with fresh water, salt, and turmeric for 20-25 minutes (or until soft).
  3. If using canned chickpeas, rinse and drain them before use.

Step 2: Prepare the Masala

  1. Heat oil in a pan and add cumin seeds.
  2. Add chopped onions and sauté until golden brown.
  3. Stir in ginger-garlic paste and cook for 1 minute.
  4. Add pureed tomatoes and cook until oil separates.
  5. Mix in turmeric, coriander powder, cumin powder, red chili powder, garam masala, and salt.
  6. Cook for 2-3 minutes, then add water and let it simmer.

Step 3: Combine and Serve

  1. Add the cooked chickpeas to the masala and mix well.
  2. Simmer for 10 minutes, stirring occasionally.
  3. Stir in lemon juice and garnish with fresh coriander leaves.

Step 4: Serve

  1. Serve hot with rice, roti, or naan.
  2. Enjoy your flavorful Chana Masala!

Tips for Perfect Chana Masala

  1. For a Thicker Gravy: Mash a few chickpeas while cooking.
  2. For Extra Flavor: Add a pinch of kasuri methi (dried fenugreek leaves) at the end.
  3. For a Restaurant-Style Dish: Add a dollop of butter or cream before serving.
