Chanterelle Pasta Recipe

A rich and flavorful Chanterelle Pasta dish made with delicate chanterelle mushrooms, garlic, and cream. Perfect for a gourmet homemade meal!



Ingredients:

  • 8 oz (225g) pasta (tagliatelle, fettuccine, or spaghetti)
  • 2 cups fresh chanterelle mushrooms, cleaned and sliced
  • 2 tablespoons unsalted butter
  • 1 tablespoon olive oil
  • 3 cloves garlic, minced
  • ½ teaspoon salt (or to taste)
  • ¼ teaspoon black pepper
  • ¼ cup dry white wine (optional)
  • ½ cup heavy cream
  • ¼ cup grated Parmesan cheese
  • 2 tablespoons fresh parsley, chopped
  • 1 teaspoon lemon zest (optional, for freshness)

Instructions:

Step 1: Cook the Pasta

  1. Bring a large pot of salted water to a boil.
  2. Cook the pasta according to package instructions until al dente.
  3. Reserve ½ cup of pasta water before draining.

Step 2: Sauté the Chanterelle Mushrooms

  1. In a large skillet over medium heat, melt the butter with olive oil.
  2. Add the garlic and sauté for about 1 minute until fragrant.
  3. Add the chanterelle mushrooms, salt, and black pepper.
  4. Cook for 5-7 minutes, stirring occasionally, until the mushrooms are soft and lightly browned.
  5. Pour in the white wine (if using) and let it cook for 1-2 minutes until mostly evaporated.

Step 3: Make the Sauce

  1. Lower the heat and stir in the heavy cream.
  2. Simmer for 2-3 minutes, allowing the flavors to meld.
  3. Add the Parmesan cheese and stir until melted and combined.
  4. If the sauce is too thick, add a splash of the reserved pasta water to loosen it.

Step 4: Combine and Serve

  1. Add the drained pasta to the skillet and toss to coat in the creamy chanterelle sauce.
  2. Stir in the fresh parsley and lemon zest for a burst of flavor.
  3. Serve immediately with extra Parmesan cheese on the side.
