Ingredients:

  • 2 salmon fillets (6 oz each)
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • ¼ cup all-purpose flour (or almond flour for a low-carb option)
  • 2 tablespoons olive oil
  • 2 tablespoons unsalted butter
  • 2 cloves garlic, minced
  • ½ cup chicken or vegetable broth
  • ¼ cup fresh lemon juice
  • ¼ cup dry white wine (optional)
  • 2 tablespoons capers, drained
  • 2 tablespoons fresh parsley, chopped
  • Lemon slices, for garnish

Instructions:

Step 1: Prepare the Salmon

  1. Pat the salmon fillets dry with a paper towel and season both sides with salt and black pepper.
  2. Lightly dredge the fillets in flour, shaking off any excess.

Step 2: Sear the Salmon

  1. Heat the olive oil in a large skillet over medium-high heat.
  2. Add the salmon fillets and cook for 3-4 minutes per side until golden brown and just cooked through.
  3. Remove the salmon from the skillet and set aside.

Step 3: Make the Piccata Sauce

  1. In the same skillet, melt the butter over medium heat.
  2. Add the minced garlic and sauté for about 30 seconds until fragrant.
  3. Pour in the broth, lemon juice, and white wine (if using). Stir well.
  4. Bring to a simmer and cook for 2-3 minutes until slightly reduced.
  5. Stir in the capers and fresh parsley.

Step 4: Finish and Serve

  1. Return the salmon fillets to the skillet and spoon the sauce over them.
  2. Let them simmer for about 1 minute to absorb the flavors.
  3. Garnish with lemon slices and serve immediately.
