Chicken Do Pyaza

Chicken Do Pyaza is a North Indian-style chicken curry featuring a double dose of onions — Stir-fried and in the gravy — for rich flavor and mild sweetness. A perfect balance of spices and hearty texture makes it a favorite with naan or rice.



Ingredients:

  • 500g chicken (bone-in or boneless)
  • 3 tablespoons oil or ghee
  • 2 large onions (1 sliced, 1 cubed)
  • 1 tablespoon ginger-garlic paste
  • 2 medium tomatoes, finely chopped
  • 2 green chilies, slit (optional)
  • ½ cup yogurt (whisked)
  • 1 teaspoon cumin seeds
  • 1 teaspoon coriander powder
  • 1 teaspoon turmeric powder
  • 1 teaspoon red chili powder
  • 1 teaspoon garam masala
  • Salt to taste
  • Fresh coriander for garnish

Step-by-Step Instructions:

  1. Heat oil in a pan. Add cumin seeds and let them splutter.
  2. Add sliced onions and Stir-fry till golden brown.
  3. Add ginger-garlic paste and green chilies. Stir-fry for a minute until raw smell disappears.
  4. Add chopped tomatoes, turmeric, chili powder, coriander powder, and salt. Cook until oil separates.
  5. Add chicken pieces and mix well with the masala. Stir-fry for 5–7 minutes.
  6. Lower the flame and add whisked yogurt slowly, stirring continuously.
  7. Add about ½ cup water (optional) and cover. Cook for 20 minutes or until chicken is tender.
  8. Add cubed onions and cook uncovered for 5–7 more minutes until slightly tender but crunchy.
  9. Finish with garam masala and garnish with fresh coriander.

Tips:

  • Stir-fry onions well for that rich base flavor.
  • Use shallots instead of cubed onions for extra punch.
  • You can add capsicum along with cubed onions for variation.
