Chicken Thukpa

Chicken Thukpa is a comforting and spicy Tibetan noodle soup loaded with vegetables, chicken, and aromatic spices. Perfect for chilly evenings!



Ingredients:

  • 200g boneless chicken (boiled and shredded)
  • 1 tablespoon oil
  • 1 medium onion, sliced
  • 1 tablespoon garlic, finely chopped
  • 1 tablespoon ginger, finely chopped
  • 1 green chili, finely chopped (optional)
  • 1 carrot, julienned
  • ½ cup cabbage, shredded
  • 1 small capsicum, thinly sliced
  • 3 cups chicken stock or water
  • 1 tablespoon soy sauce
  • 1 teaspoon vinegar or lemon juice
  • Salt to taste
  • Black pepper to taste
  • 1 teaspoon red chili sauce (optional)
  • 1 packet noodles (ramen, egg, or rice noodles)
  • Fresh coriander and spring onions for garnish

Step-by-Step Instructions:

  1. Boil the noodles as per package instructions. Drain and set aside.
  2. Heat oil in a pan. Add onions, ginger, garlic, and green chili. Sauté for 2 minutes.
  3. Add carrot, cabbage, and capsicum. Stir-fry on high flame for 2–3 minutes.
  4. Add the shredded chicken and mix well.
  5. Pour in chicken stock or water. Bring to a boil.
  6. Add soy sauce, vinegar, salt, pepper, and chili sauce (if using). Simmer for 5–7 minutes.
  7. Add the boiled noodles and mix.
  8. Adjust seasoning and consistency. Simmer for another minute.
  9. Garnish with fresh coriander and spring onions.
  10. Serve hot in large bowls!

Tips:

  • You can add mushrooms or spinach for variation.
  • Use bone-in chicken while boiling for a richer stock.
