Chicken Kosha, also known as Kosha Murgir Mangsho, is a slow-cooked, rich, and spicy Bengali chicken curry that’s full of deep flavors and a thick masala coating. Perfect with luchi, paratha, or rice!

Ingredients:
- 500g chicken (bone-in preferred)
- 3 tablespoons mustard oil (or any cooking oil)
- 2 bay leaves
- 3–4 green cardamoms
- 1-inch cinnamon stick
- 4–5 cloves
- 2 large onions, thinly sliced
- 1 tablespoon ginger-garlic paste
- 2 medium tomatoes, chopped
- ½ cup plain yogurt (whisked)
- 1 teaspoon turmeric powder
- 1 teaspoon red chili powder
- 1 teaspoon Kashmiri red chili powder (for color)
- 1 teaspoon cumin powder
- 1 teaspoon coriander powder
- ½ teaspoon garam masala
- Salt to taste
- Chopped coriander leaves for garnish

Step-by-Step Instructions:
- Marinate the chicken with yogurt, turmeric, chili powder, and salt. Set aside for at least 30 minutes.
- Heat mustard oil in a pan until it starts to smoke. Reduce the flame and add bay leaves, cardamoms, cinnamon, and cloves.
- Add sliced onions and sauté until golden brown.
- Add ginger-garlic paste and cook for 1–2 minutes until the raw smell goes.
- Add chopped tomatoes and cook until they soften.
- Add cumin powder, coriander powder, Kashmiri chili powder, and cook the masala till oil separates.
- Add the marinated chicken and cook on medium heat, stirring occasionally.
- After about 10 minutes, cover and slow cook (kosha) on low flame for 20–25 minutes, stirring every few minutes.
- Once the chicken is tender and the gravy is thick, sprinkle garam masala and cook for another 2–3 minutes.
- Garnish with fresh coriander leaves.
- Serve hot with luchi, paratha, or plain rice.
