  • 2 cups cooked corned beef, chopped
  • 2 cups cooked potatoes, diced (boiled or leftover roasted)

  • Salt and pepper, to taste
  • ½ teaspoon garlic powder (optional)
  • 1 tablespoon chopped fresh parsley (optional)
  • 2 eggs (optional, for serving on top)

Instructions:

1. Prep the Ingredients:

  • Chop the corned beef and potatoes into bite-sized pieces.
  • Dice the onion finely.

2. Sauté the Onion:

  • Heat oil or butter in a large skillet over medium heat.
  • Add the chopped onion and cook until translucent, about 4–5 minutes.
