Ingredients:

For the Cake:

  • 2 cups (250g) all-purpose flour
  • ¾ cup (75g) unsweetened cocoa powder
  • 2 teaspoons baking powder
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • 1 ¾ cups (350g) granulated sugar
  • ½ cup (120ml) vegetable oil
  • 2 large eggs
  • 1 cup (240ml) buttermilk
  • 1 teaspoon vanilla extract
  • 1 cup (240ml) hot coffee or hot water

For the Fudge Frosting:

  • 1 cup (230g) unsalted butter, softened
  • ½ cup (45g) unsweetened cocoa powder
  • 3 cups (360g) powdered sugar
  • ⅓ cup (80ml) heavy cream (or more as needed)
  • 1 teaspoon vanilla extract
  • ½ cup (90g) melted dark chocolate

For the Ganache Drizzle:

  • ½ cup (120ml) heavy cream
  • ¾ cup (130g) dark chocolate, chopped

Instructions:

Step 1: Prepare the Cake Batter

  1. Preheat oven to 350°F (175°C). Grease and flour two 9-inch (23 cm) round cake pans.
  2. In a large bowl, sift together flour, cocoa powder, baking powder, baking soda, and salt.
  3. In another bowl, whisk sugar, oil, eggs, buttermilk, and vanilla extract until well combined.
  4. Gradually add the dry ingredients into the wet ingredients, stirring gently.
  5. Pour in the hot coffee and mix until smooth (batter will be thin).
  6. Divide the batter evenly between the prepared cake pans.
  7. Bake for 30-35 minutes or until a toothpick inserted comes out clean.
  8. Allow cakes to cool in the pans for 10 minutes, then transfer to a wire rack to cool completely.

Step 2: Make the Fudge Frosting

  1. In a mixing bowl, beat the softened butter until creamy.
  2. Add cocoa powder, powdered sugar, and heavy cream, beating until smooth.
  3. Mix in the vanilla extract and melted dark chocolate, whipping until fluffy.

Step 3: Prepare the Ganache

  1. Heat heavy cream in a small saucepan over low heat until hot but not boiling.
  2. Pour over chopped dark chocolate and let sit for 2 minutes.
  3. Stir until smooth and glossy. Let cool slightly.

Step 4: Assemble the Cake

  1. Place one cake layer on a serving plate and spread a generous layer of fudge frosting on top.
  2. Add the second cake layer and frost the top and sides evenly.
  3. Drizzle the ganache over the cake, letting it drip down the sides.
  4. Optionally, decorate with chocolate shavings or sprinkles.
