Ingredients:

For the Fish Fingers:

  • 8 frozen or homemade fish fingers
  • 1 cup (120g) all-purpose flour
  • 2 large eggs, beaten
  • 1 cup (100g) panko breadcrumbs
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • ½ teaspoon paprika
  • Cooking spray or oil for baking/frying

For the Tacos:

  • 8 small flour or corn tortillas
  • 1 cup (100g) shredded cabbage (red or green)
  • ½ cup (120g) sour cream or Greek yogurt
  • 1 tablespoon lime juice
  • 1 teaspoon hot sauce (optional)
  • ½ teaspoon garlic powder
  • ¼ teaspoon salt
  • 1 avocado, sliced
  • ½ cup (80g) diced tomatoes
  • ¼ cup (10g) chopped fresh cilantro
  • Lime wedges for serving

Instructions:

Step 1: Cook the Fish Fingers

  1. Preheat your oven to 400°F (200°C) or heat oil in a skillet over medium heat.
  2. Set up a dredging station: Place flour in one bowl, beaten eggs in another, and breadcrumbs mixed with salt, pepper, and paprika in a third.
  3. Coat each fish finger in flour, dip in egg, then coat with breadcrumbs.
  4. Arrange on a baking sheet and bake for 15-20 minutes, flipping halfway through, or fry until golden brown.

Step 2: Prepare the Sauce

  1. In a small bowl, mix sour cream, lime juice, hot sauce (if using), garlic powder, and salt.
  2. Stir well and set aside.

Step 3: Assemble the Tacos

  1. Warm the tortillas in a dry skillet or microwave for a few seconds.
  2. Place shredded cabbage on each tortilla.
  3. Add a cooked fish finger on top.
  4. Drizzle with the creamy sauce.
  5. Top with avocado slices, diced tomatoes, and fresh cilantro.
  6. Serve with lime wedges on the side.
