Gobi Egg Curry is a delicious and protein-packed dish that combines the goodness of cauliflower (gobi) and eggs in a rich, spiced gravy. Perfect with rice or roti!

Ingredients

  • 2 cups cauliflower florets
  • 4 boiled eggs, peeled
  • 1 large onion, finely chopped
  • 2 tomatoes, pureed
  • 2 cloves garlic, minced
  • 1/2 inch ginger, grated
  • 1 green chili, chopped
  • 1/2 teaspoon cumin seeds
  • 1/2 teaspoon turmeric powder
  • 1 teaspoon coriander powder
  • 1/2 teaspoon red chili powder
  • 1/2 teaspoon garam masala
  • 1/2 teaspoon salt (or to taste)
  • 1/2 cup water
  • 2 tablespoons oil
  • 2 tablespoons chopped coriander leaves (for garnish)

Instructions

Step 1: Prepare the Cauliflower

  1. Heat 1 tablespoon oil in a pan.
  2. Add cauliflower florets and sauté for 5 minutes until lightly golden. Remove and set aside.

Step 2: Cook the Gravy

  1. Heat the remaining oil in the same pan.
  2. Add cumin seeds and let them splutter.
  3. Add chopped onions and sauté until golden brown.
  4. Stir in garlic, ginger, and green chili, and sauté for another minute.
  5. Add tomato puree, turmeric powder, coriander powder, red chili powder, and salt.
  6. Cook until the oil separates from the masala.

Step 3: Add Cauliflower and Eggs

  1. Add the sautéed cauliflower and mix well with the gravy.
  2. Pour in water, cover, and cook for 10 minutes until the cauliflower is tender.
  3. Make small slits in the boiled eggs and add them to the curry.
  4. Stir gently, cover, and cook for another 5 minutes.
  5. Add garam masala and mix well.

Step 4: Serve

  1. Garnish with fresh coriander leaves.
  2. Serve hot with rice, roti, or naan.
