Khaman Recipe

Khaman is a soft and spongy Gujarati steamed snack made from gram flour (besan). It is light, tangy, and slightly sweet, making it a perfect tea-time or breakfast dish.


Ingredients

For the Batter:

  • 1 cup gram flour (besan)
  • 1 tablespoon semolina (sooji/rava)
  • 1 teaspoon sugar
  • 1/2 teaspoon salt (or to taste)
  • 1/2 teaspoon turmeric powder
  • 1 teaspoon lemon juice
  • 1 teaspoon ginger-green chili paste
  • 1 teaspoon fruit salt (Eno) or 1/2 teaspoon baking soda
  • 3/4 cup water (adjust as needed)

For the Tempering:

  • 1 tablespoon oil
  • 1 teaspoon mustard seeds
  • 1 teaspoon sesame seeds
  • 1-2 green chilies, slit
  • 8-10 curry leaves
  • 1 teaspoon sugar (optional)
  • 1/2 cup water
  • 1 tablespoon lemon juice

For Garnishing:

  • Chopped coriander leaves
  • Grated coconut (optional)

Instructions

Step 1: Prepare the Batter

  1. In a mixing bowl, combine gram flour, semolina, sugar, salt, turmeric powder, lemon juice, and ginger-green chili paste.
  2. Gradually add water and whisk until you get a smooth, lump-free batter.
  3. Just before steaming, add fruit salt (Eno) or baking soda and mix gently. The batter will become airy and light.

Step 2: Steam the Khaman

  1. Grease a steaming plate or tray with oil.
  2. Pour the batter into the tray and spread it evenly.
  3. Steam in a preheated steamer for 15-20 minutes or until a toothpick inserted comes out clean.
  4. Remove from the steamer and let it cool for a few minutes before cutting into squares or diamond shapes.

Step 3: Prepare the Tempering

  1. Heat oil in a small pan.
  2. Add mustard seeds and let them splutter.
  3. Add sesame seeds, green chilies, and curry leaves. Sauté for a few seconds.
  4. Add sugar, water, and lemon juice. Let it simmer for a minute.
  5. Pour this tempering evenly over the khaman pieces.

Step 4: Serve

  1. Garnish with chopped coriander leaves and grated coconut.
  2. Serve warm with green chutney and enjoy!

Tips for Perfect Khaman

  1. For Extra Softness: Add a pinch of citric acid along with lemon juice.
  2. For a Fluffier Texture: Do not overmix after adding Eno.
  3. For Even Cooking: Steam on medium heat for a consistent texture.
