Ingredients
For the Korma Gravy:
- 1 cup onion, finely chopped
- 2 tomatoes, pureed
- 1/4 cup cashew nuts (soaked for 10 minutes)
- 1/4 cup yogurt
- 2 tablespoons fresh cream
- 1 teaspoon ginger-garlic paste
- 1 green chili, chopped
- 1/2 teaspoon turmeric powder
- 1 teaspoon red chili powder
- 1 teaspoon coriander powder
- 1/2 teaspoon garam masala
- 1 teaspoon cumin seeds
- 1 small cinnamon stick
- 2-3 cloves
- 2-3 green cardamoms
- 1 bay leaf
- 1/2 teaspoon salt (or to taste)
- 1 tablespoon oil or ghee
- 1/2 cup water (adjust as needed)
For the Paneer:
- 250g paneer, cut into cubes
- 1 tablespoon ghee or butter
- 1 teaspoon kasuri methi (dried fenugreek leaves)
- 1 tablespoon chopped coriander leaves (for garnish)
Instructions
Step 1: Prepare the Korma Gravy
- Heat oil or ghee in a pan over medium heat.
- Add cumin seeds, cinnamon stick, cloves, cardamoms, and bay leaf. Sauté for a few seconds until aromatic.
- Add chopped onions and sauté until golden brown.
- Stir in ginger-garlic paste and green chili. Cook for 1 minute.
- Add tomato puree and cook until oil separates.
- Blend soaked cashew nuts into a smooth paste and add to the pan.
- Stir in turmeric powder, red chili powder, coriander powder, and salt. Cook for 2 minutes.
- Add yogurt and mix well, stirring continuously.
- Pour in water, bring to a simmer, and let the gravy cook for 5 minutes.
Step 2: Cook the Paneer
- In a separate pan, heat ghee or butter.
- Lightly sauté the paneer cubes until golden brown.
- Add the sautéed paneer to the korma gravy.
- Stir in kasuri methi and fresh cream. Let it simmer for another 3 minutes.
Step 3: Serve
- Garnish with chopped coriander leaves.
- Serve hot with naan, roti, or steamed rice.
