Ingredients:

  • 3 ½ cups all-purpose flour

  • 2 ¼ teaspoons (1 packet) active dry yeast
  • 1 teaspoon sugar
  • 1 teaspoon salt

  • 1 teaspoon sugar (optional, to balance acidity)

For Topping:

  • 2 tablespoons grated Parmesan cheese (optional)
  • Fresh basil leaves (optional)
  • Olive oil for drizzling

Instructions:

Step 1: Prepare the Dough

  1. In a small bowl, mix warm water, sugar, and yeast. Let it sit for 5-10 minutes until frothy.
  2. In a large mixing bowl, combine flour and salt. Add yeast mixture and olive oil.
  3. Knead the dough for about 8-10 minutes until smooth and elastic.
  4. Cover and let it rise in a warm place for 1-2 hours, or until doubled in size.

Step 2: Make the Tomato Sauce

  1. Heat olive oil in a pan over medium heat. Add minced garlic and sauté until fragrant.
  2. Add crushed tomatoes, oregano, salt, pepper, red pepper flakes, and sugar.
  3. Simmer for 15-20 minutes, stirring occasionally, until thickened. Let it cool.

Step 3: Bake the Dough

  1. Preheat oven to 450°F (230°C).
  2. Grease a 9×13-inch baking sheet with olive oil.
  3. Punch down the risen dough and press it into the baking sheet, spreading it evenly.
  4. Bake for 10-12 minutes until lightly golden.

Step 4: Assemble the Tomato Pie

  1. Spread a generous layer of cooled tomato sauce over the baked crust.
  2. Bake for an additional 10-15 minutes until the edges are golden brown.
  3. Let the pie cool to room temperature before serving.
  4. Sprinkle with Parmesan cheese, fresh basil, and a drizzle of olive oil if desired.
