- 1 teaspoon cumin seeds
- 1 bay leaf
- 1 onion, finely chopped
- 2 tomatoes, pureed

- 1/2 teaspoon turmeric powder
- 1 teaspoon red chili powder
- 1 teaspoon coriander powder
- 1/2 teaspoon garam masala
- 1 teaspoon salt (or to taste)
- 1/2 teaspoon kasuri methi (dried fenugreek leaves)

Instructions
Step 1: Prepare the Soya Chunks
- Boil water in a pan and add soya chunks.
- Let them soak for 10 minutes, then drain and squeeze out excess water.
- Rinse with fresh water and squeeze again.
Step 2: Cook the Masala
- Heat oil in a pan and add cumin seeds and bay leaf.
- Add chopped onions and sauté until golden brown.
- Stir in ginger-garlic paste and green chili. Cook for 1 minute.
- Add tomato puree and cook until the oil starts separating.
- Mix in turmeric powder, red chili powder, coriander powder, and salt.
- Add yogurt (if using) and stir well.
Step 3: Cook the Soya Chunks
- Add the prepared soya chunks to the masala and mix well.
- Pour in water and let it simmer for 7-10 minutes, allowing the flavors to blend.
- Stir in garam masala and kasuri methi.
