A crispy, spicy, and flavorful Camarones Roca a shrimp dish inspired by popular Latin American and Asian flavors. Perfect as an appetizer or main course!



Ingredients:

For the Shrimp:

  • 1 lb (450g) shrimp, peeled and deveined
  • ½ cup (65g) all-purpose flour
  • ½ cup (65g) cornstarch
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • ½ teaspoon garlic powder
  • ½ teaspoon paprika
  • 1 large egg
  • ½ cup (120ml) buttermilk
  • Vegetable oil for frying

For the Sauce:

  • ½ cup (120ml) mayonnaise
  • 2 tablespoons sweet chili sauce
  • 1 tablespoon sriracha (adjust to taste)
  • 1 teaspoon honey
  • 1 teaspoon lime juice
  • ½ teaspoon garlic powder

For Garnish:

  • 2 tablespoons chopped green onions
  • 1 tablespoon sesame seeds

Instructions:

Step 1: Prepare the Shrimp

  1. In a bowl, mix flour, cornstarch, salt, black pepper, garlic powder, and paprika.
  2. In another bowl, whisk the egg and buttermilk together.
  3. Dip each shrimp into the buttermilk mixture, then coat with the flour mixture.
  4. Place the coated shrimp on a plate and let sit for 5 minutes.

Step 2: Fry the Shrimp

  1. Heat oil in a deep pan or fryer to 350°F (175°C).
  2. Fry the shrimp in batches for 2-3 minutes or until golden brown and crispy.
  3. Remove and place on a paper towel-lined plate to drain excess oil.

Step 3: Make the Sauce

  1. In a bowl, mix mayonnaise, sweet chili sauce, sriracha, honey, lime juice, and garlic powder.
  2. Stir well until smooth and creamy.

Step 4: Toss and Serve

  1. Toss the crispy shrimp in the sauce until well coated.
  2. Transfer to a serving dish and garnish with chopped green onions and sesame seeds.
  3. Serve immediately and enjoy!
