Ingredients:
- 200g paneer, cut into cubes
- 2 tablespoons oil or ghee
- 1 bay leaf
- 2 green cardamoms
- 4 black peppercorns
- 1-inch cinnamon stick
- 1 teaspoon cumin seeds
- 1 teaspoon grated ginger
- 2 medium onions, chopped
- 2 tomatoes, pureed
- 10 cashews (soaked in warm water for 15 minutes)
- 1 teaspoon coriander powder
- ½ teaspoon turmeric powder
- ½ teaspoon red chili powder
- Salt to taste
- ½ teaspoon garam masala
- ¼ cup fresh cream
- 1 teaspoon kasuri methi (dried fenugreek leaves), crushed
- Chopped coriander for garnish

Step-by-Step Instructions:
- Soak cashews in warm water for 15 minutes, then blend into a smooth paste.
- Heat oil or ghee in a pan. Add bay leaf, cardamoms, peppercorns, cinnamon stick, and cumin seeds.
- Once they splutter, add grated ginger and sauté for 30 seconds.
- Add chopped onions and sauté until golden brown.
- Add tomato puree and cook for 5–6 minutes until oil separates.
- Add turmeric powder, coriander powder, red chili powder, and salt. Cook for a minute.
- Add cashew paste and mix well. Cook for 2–3 minutes.
- Add ½ to 1 cup water to adjust the gravy consistency. Bring it to a boil.
- Add paneer cubes and simmer for 5 minutes.
- Add fresh cream, garam masala, and kasuri methi. Mix gently and cook for 1–2 minutes.
- Garnish with chopped coriander and serve hot.
