Chicken Kosha

Chicken Kosha, also known as Kosha Murgir Mangsho, is a slow-cooked, rich, and spicy Bengali chicken curry that’s full of deep flavors and a thick masala coating. Perfect with luchi, paratha, or rice!



Ingredients:

  • 500g chicken (bone-in preferred)
  • 3 tablespoons mustard oil (or any cooking oil)
  • 2 bay leaves
  • 3–4 green cardamoms
  • 1-inch cinnamon stick
  • 4–5 cloves
  • 2 large onions, thinly sliced
  • 1 tablespoon ginger-garlic paste
  • 2 medium tomatoes, chopped
  • ½ cup plain yogurt (whisked)
  • 1 teaspoon turmeric powder
  • 1 teaspoon red chili powder
  • 1 teaspoon Kashmiri red chili powder (for color)
  • 1 teaspoon cumin powder
  • 1 teaspoon coriander powder
  • ½ teaspoon garam masala
  • Salt to taste
  • Chopped coriander leaves for garnish

Step-by-Step Instructions:

  1. Marinate the chicken with yogurt, turmeric, chili powder, and salt. Set aside for at least 30 minutes.
  2. Heat mustard oil in a pan until it starts to smoke. Reduce the flame and add bay leaves, cardamoms, cinnamon, and cloves.
  3. Add sliced onions and sauté until golden brown.
  4. Add ginger-garlic paste and cook for 1–2 minutes until the raw smell goes.
  5. Add chopped tomatoes and cook until they soften.
  6. Add cumin powder, coriander powder, Kashmiri chili powder, and cook the masala till oil separates.
  7. Add the marinated chicken and cook on medium heat, stirring occasionally.
  8. After about 10 minutes, cover and slow cook (kosha) on low flame for 20–25 minutes, stirring every few minutes.
  9. Once the chicken is tender and the gravy is thick, sprinkle garam masala and cook for another 2–3 minutes.
  10. Garnish with fresh coriander leaves.
  11. Serve hot with luchi, paratha, or plain rice.

  • Slow cooking (kosha) is key—don’t rush!
  • Mustard oil gives authentic flavor; heat it properly to remove rawness.
  • For extra richness, add a spoon of ghee at the end.
